Tomato, Mozzarella and Basil Bruschetta

Bruschetta is a slice of heaven!

Did you know bruschetta’s (pronounced brusketta) origins trace back to medieval time?! The name cames from the Roman bruscare, meaning ‘roasted over coals’.

This italian antipasto is such an easy entree to create.

The basic recipe consists in nothing more than a slice of grilled bread rubbed with garlic and topped with olive oil and salt, with tomatoes being very popular as well.

Basics: Ciabatta bread, garlic, mozzarella cheese, tomatoes, basil, olive oil, salt and pepper.

Ingredients:

  • 1 ciabbata bread, sliced
  • 1 garlic clove
  • 1 fresh mozzarella, sliced
  • 1 large ripe tomato, sliced (no core)
  • 1 small bunch fresh basil leaves
  • Salt & pepper
  • Olive oil

Steps:

  1. Slice the bread 1cm thick and toast it on a griddle pan.
  2. Rub the bread a couple of times with a cut clove of garlic and place the slices of mozzarella with the tomato on top.
  3. Add the basil leaves and drizzle with good extra virgin olive oil.
  4. Season with salt and pepper and serve.

PS: You can also chop everything up, season and then spread it on the toast.

Bruschetta will make everyone happy! It is great as an entree before a good pasta or lasagna dish, or even as a snack or a canape in a party.

There are so many different toppings that you can add on top of the bread, so get creative and use your own best loved ingredients such as your favorite cheese or herbs.
