We just L-O-V-E a good curry!
Fresh ingredients with coconut in a lime curry sauce with ginger and garlic: YUM!
The mix of the sweetness of the coconut milk with the acidity of the lime and the hot kick from the chilies is just delicious.
This is a really easy and quick curry recipe!
Basics: Mangetout, red onion, red pepper, spring onions, garlic, ginger and coconut milk.

Ingredients:
- 1 red onion
- 2 cloves garlic
- Fresh ginger
- 200 gr mangetout
- 1 red pepper
- 1 green pepper
- 2 teaspoons curry powder
- 2 teaspoons tumeric
- 1 can coconut milk
- 1 lime
- 1 cup basmati rice
- Sesame seeds, chilies, lime and coriander to serve
Steps:

Start by cooking the rice.

Whilst the rice is cooking, slice the onion, garlic and red pepper.

Put your wok on a medium-high heat and add the chopped ingredients with a drizzle of olive oil.

Stir until the onion starts to get brown and add the mangetout, mixing it all together.

Add the curry powder, tumeric and the coconut milk.

Add a pinch of salt and pepper and squeeze in half a lime. Taste and adjust the seasoning if necessary.

Lower the heat and let it cook for 5 minutes (if you like your curry to be extra spicy, you can now add the chilies).

Remove from the heat.
- Sprinkle the rice with sesame seeds and the curry with coriander and chilies.
- Serve with fresh lime.
This curry doesn’t really have a main protein but you can add tofu, chicken, beef or prawns.
