Vegetarian Rice Curry

We just L-O-V-E a good curry!

Fresh ingredients with coconut in a lime curry sauce with ginger and garlic: YUM!

The mix of the sweetness of the coconut milk with the acidity of the lime and the hot kick from the chilies is just delicious.

This is a really easy and quick curry recipe!

Basics: Mangetout, red onion, red pepper, spring onions, garlic, ginger and coconut milk.

Ingredients:

  • 1 red onion
  • 2 cloves garlic
  • Fresh ginger
  • 200 gr mangetout
  • 1 red pepper
  • 1 green pepper
  • 2 teaspoons curry powder
  • 2 teaspoons tumeric
  • 1 can coconut milk
  • 1 lime
  • 1 cup basmati rice
  • Sesame seeds, chilies, lime and coriander to serve

Steps:

  1. Start by cooking the rice.
  2. Whilst the rice is cooking, slice the onion, garlic and red pepper.
  3. Put your wok on a medium-high heat and add the chopped ingredients with a drizzle of olive oil.
  4. Stir until the onion starts to get brown and add the mangetout, mixing it all together.
  5. Add the curry powder, tumeric and the coconut milk.
  6. Add a pinch of salt and pepper and squeeze in half a lime. Taste and adjust the seasoning if necessary.
  7. Lower the heat and let it cook for 5 minutes (if you like your curry to be extra spicy, you can now add the chilies).
  8. Remove from the heat.
  9. Sprinkle the rice with sesame seeds and the curry with coriander and chilies.
  10. Serve with fresh lime.

This curry doesn’t really have a main protein but you can add tofu, chicken, beef or prawns.
