Who doesn’t like lasagna?!
Lasagna is a great dish to get creative. You can use whatever ingredients you like, you can go vegetarian, add tuna, chicken or pork meat or even go vegan. Each person has their own recipe and Vânia has shared hers with us.
Vânia has been a vegetarian for almost a year now. When we asked her to share a recipe with us, she thought about this delicious and really easy to make vegetarian lasagna.
- 1 Cabbage
- 1 Leek
- 260g Mushrooms
- 340g Canned Corn
- 2 Large Grated Carrots
- 1 Onion
- 3 Garlic Cloves
- White Sauce (Or Cottage Cheese for a more healthier option)
- Lasagna Sheets
- Salt and Pepper
1 – Start by grating the carrots. Slice the cabbage and wash it with warm water, then cut the mushrooms and leek.
2- Add the onion and garlic cloves with a bit of olive oil to a pan and let it cook until the onion turns gold.
3- Add the sliced mushrooms, corn, grated carrots, leek and cabbage and let it cook for about 10 minutes.
4- Add the white sauce or cottage cheese to the mixture.
3- In a baking trey start to build your layers: add the lasagna sheets with the vegetable mixture on top. Repeat the process and leave a layer of lasagna sheets to the end. Top the lasagna with the white sauce or cottage cheese. You can also add mozzarella cheese if you wish.
4- Place the baking trey in the oven pre-heated to 180º and let it cook until golden on top.
